7-ingredient peanut butter cookies (and none of them is sugar!)

I CAN TAKE NO CREDIT FOR THESE COOKIES. Except for the brilliant addition of chocolate chip cookies to half of them… Otherwise, this simple, (formerly) healthy and amazing recipe belongs to Heidi Swanson at 101 Cookbooks, the very best blog for fresh, nutritious and GORGEOUS food ideas.

And don’t worry; the sugar substitute is pure maple syrup. It works perfectly. In fact, the whole recipe includes a scant 5 ingredients (minus the chocolate chips).So far, I have eaten two this morning for “breakfast”. Since they involve whole wheat flour, peanut butter and maple syrup, I figure they’re pretty close to pancakes or toast. Both are respectable breakfast choices so… Phoebe tried one last night too. Estelle is a little young for nuts so she’ll have to wait for another batch. Besides, this one will likely be gone in the next 24 hours. Mmm.
