Simple White Bean Hummus with Lemon Juice

Ingredients

  • 1 12-ounce can white beans, rinsed and drained
  • juice of 1 lemon
  • 1/2 small garlic clove finely grated with a microplane (optional–this will add a bit of spice) OR 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil, plus 1 tablespoon to drizzle on top
  • 1/4 teaspoon salt
  • 12 cracks of fresh pepper

Instructions

  1. Combine everything in a food processor and blend.
  2. Serve in a bowl with extra olive oil drizzled on top.
  3. Store in an airtight container in the fridge for up to 1 week.
