Pumpkin Pie Breakfast Cookies with Whole Oats

Ingredients

  • 3 cups old-fashioned oats
  • 1/4 cup chia seeds
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons pumpkin pie spice mix
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • ¾ cup plain canned pumpkin
  • 1 egg
  • ¼ cup maple syrup
  • 1/3 cup dried cranberries (I like the reduced sugar kind)
  • 1/4 cup mini chocolate chips

Instructions

  1. Mix all ingredients together.
  2. Scoop onto a generously buttered baking sheet (or use a non-stick liner but you might want to give it a quick spray as well).
  3. Bake at 375 degrees for 25 minutes.
  4. For an extra toasty top–or to reheat–broil on LOW for an extra 2-5 minutes.
