Make-Ahead Broccoli, Ham & Cheese Pockets

The point of these pockets is adding veggies to lunch, and we’re taking a shortcut on the dough. If you want to make your own dough, I’d love to hear which recipe you like best! Please share with us in the comments.

Ingredients

  • 8 slices extra sharp cheddar cheese
  • 16 slices smoked ham (I like the kind without nitrates)
  • 1 cup chopped broccoli, steamed
  • Biscuit dough (8 biscuits)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Cook 1 cup of chopped frozen broccoli in the microwave for 2 minutes.
  3. Roll out each biscuit and pile 1 slice of cheese, a hearty tablespoon of steamed broccoli and two slices of ham on top.
  4. Pull the edges together and flip the pocket so the seams are down. Arrange on a parchment-lined baking sheet.
  5. Bake at 350 degrees F for about 20 minutes until the tops are brown.
  6. Allow the cheese to cool slightly before serving (just a couple of minutes) or store in the fridge to serve another time.
