My Kids’ Favorite Easy Pickle Recipe: Refrigerator Pickles in Minutes!

I reuse jars from spaghetti sauce, jam and anything else I can save JUST for pickle season. This recipe makes about 1 quart of pickles.

23 medium/large cucumbers, quartered and sliced thickly

1/2 sweet onion, sliced

1/3 cup vinegar (any kind)

1 cup water

1 tablespoon sugar

2 teaspoons salt

Instructions

Fill your jar with sliced cucumbers and onions.

In a large measuring cup with a spout, combine the vinegar, water, sugar and salt. Whisk until the sugar and salt has dissolved.

Pour the vinegar liquid over the cucumbers and onions.

Screw on the cap and shake.

Store in the fridge for at least 1 hour, or overnight.
