This recipe is nut-free. If you want to add nuts, replace one cup of oats for any type of nuts you like.
5 cups old-fashioned oats
3/4 cup shredded coconut
1/3 cup brown sugar
1/3 cup maple syrup
1/4 cup vegetable or olive oil
3/4 teaspoon salt
1 cup raisins or cranberries (optional)
Preheat oven to 225 degrees F.
In a large mixing bowl, combine all the ingredients EXCEPT THE RAISINS. Stir to coat every single oat with a mixture of syrup, etc.
Line 2 baking sheets with parchment paper. Spread the granola mixture between the two baking sheets. Spread out evenly.
Bake for 30 minutes.
Remove from oven, stir and spread out evenly again.
Bake for 30 minutes.
Remove from oven. Add raisins or cranberries (if using) stir and spread out evenly again.
Bake for 15 minutes. (1 hour, 15 minutes total)
Let cool completely, about 30 minutes.
Transfer granola to airtight containers and store at room temperature for up to 3 weeks.
