The baked oatmeal recipe below makes enough for two hungry people. Multiply for a bigger breakfast crowd.

Non-stick cooking spray
1 cup old-fashioned oats
2 ripe bananas
2 eggs
2 tablespoons maple syrup
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons cocoa powder
Handful of chocolate chips
Instructions
Preheat oven to 35o degrees F. Coat 2 8-ounce bowls or ramekins with non-stick cooking spray or butter.
Combine all the ingredients except cooking spray and chocolate chips in a blender or food processor and blitz until smooth. About a minute.
Pour evenly into prepared ramekins. Bake for 20-25 minutes. Or use one bowl and bake for 25-30 minutes. Want to cook in the microwave? Follow the same instructions but zap each bowl on its own for 2 minutes.
Sprinkle with chocolate chips and allow to cool for about 10 minutes.
