Serve a generous amount of this tomato mixture on top of your favorite bread: whole-wheat or soft French bread, toasted or plain. It’s really delicious on anything.

Ingredients
Scale
3–4 cups cherry tomatoes
3/4 cup extra-virgin olive oil
1/2 cup balsamic vinegar
1 tablespoon sugar
1 tablespoon salt
2 cloves minced garlic
1/2 cup fresh basil, thinly sliced (or combination of parsley, oregano or other fresh herbs you like)
Instructions
Slice tomatoes into bite-sized pieces. (I quarter cherry tomatoes.)
Combine all ingredients in an air-tight container.
Gently stir.
Marinate at least an hour, preferably more.
Dollop generously on bread or mix in with hot pasta.
