We loved our Spinach, Egg & Cheese Pockets for breakfast so much, I whipped up a version for lunch and the results are basically the same: DE-DE-DE-LICIOUS.
And in between all that gooey cheese and satisfying ham is a cheeky serving of veggies. Tucked politely inside, along for the ride. Not bad for a bag of frozen broccoli!
What you need to make Broccoli, Ham & Cheese Pockets
- Extra sharp cheddar cheese
- Smoked ham (I like the kind without nitrates)
- Chopped broccoli (a bag of frozen chopped broccoli is perfect!)
- Biscuit dough*

How to make Broccoli, Ham & Cheese Pockets
Preheat your oven to 350 degrees F.
Roll out each biscuit and pile 1 slice of cheese, a hearty tablespoon of broccoli and two slices of ham on top.
Pull the edges together and flip the pocket so the seams are down. Arrange on a parchment-lined baking sheet.
Bake at 350 degrees F for about 20 minutes until the tops are brown.
Allow the cheese to cool slightly before serving (just a couple of minutes) or store in the fridge to serve another time.
Tip: It’s easy to assemble these pockets in advance, store in the fridge, and bake off when you’re ready.
