cheese tortellini with spinach and bacon

Use any shape of pasta you like! It works with both ravioli, tortellini, even spaghetti.

Ingredients

  • 1/2 pound bacon, cut into small pieces
  • 1/2 cup white wine
  • 1 package fresh (or frozen) cheese tortellini (or ravioli)
  • 1 cup frozen chopped spinach
  • 1/2 teaspoon salt & 1/4 teaspoon pepper
  • Optional: freshly grated Parmesan cheese

Instructions

  1. Put a big pot of water on to boil.
  2. In a large saute pan, cook bacon pieces until crispy. Don’t drain the grease.
  3. Cook pasta according to directions, MINUS 1 minute (if it’s fresh this may only mean cooking for 3 minutes).
  4. While the pasta cooks, add wine to the bacon pan and deglaze the bottom by stirring with a spoon, scraping up any bits that have stuck to the pan. Those are going to be delicious.
  5. Drain pasta and reserve 1 cup of cooking water. Add your hot pasta to the bacon pan.
  6. Pour in frozen spinach (no need to thaw because it’ll thaw quickly and you don’t want to over cook). Stir gently.
  7. Sprinkle with salt, pepper and oil (plus Parmesan cheese if using) and serve.
