  • 1 bag of baby carrots
  • 3 tablespoons of olive oil
  • 1 teaspoon salt
  • Optional: 1/2 teaspoon cinnamon or 2 tablespoons pure maple syrup or honey

Instructions

  1. Preheat oven to 425 degrees F and start with a bag of baby carrots. I like organic. Bonus, they’re already peeled and cut.
  2. Pour them onto a baking sheet and add 3 tablespoons of olive oil.
  3. Add a drizzle of pure maple syrup or honey, about 2 tablespoons. Or just sprinkle on about 1/2 teaspoon of cinnamon instead.
  4. Use your hands to slather the carrots in all the maple syrup (or honey or cinnamon), oil and salt. Set the carrots apart so they cook evenly.
  5. Put your pan in the oven. After about 20 minutes, shake the pan to move your carrots around.
  6. Remove from the oven once they’re brown on the edges and tender inside. About 25-35 minutes.
