Strawberry Bliss Protein Balls

I use sweetened shredded coconut, which amounts to the only sweetener used and the result is still not overly sweet. If you choose unsweetened coconut, the flavor will be quite different.

Ingredients

  • 1 cup frozen strawberries
  • 1 cup whole old-fashioned oats
  • 1/2 cup unsalted sunflower seeds
  • 1/2 cup dried banana chips
  • 1 teaspoon coconut oil
  • 1 1/2 cups shredded coconut, separated

Instructions

  1. Pulse 1 cup of shredded coconut in a food processor until fairly fine. Pour into a shallow bowl. This is what you’ll use to coat the protein balls.
  2. Using the same food processor, combine the remaining ingredients. Process until your mixture begins to stick together, almost like dough.
  3. Form mixture into balls, rolling them between your palms.
  4. Roll each ball in the chopped coconut and arrange in an air-tight container. Cool in the fridge for at least an hour or overnight. Store in the fridge for up to 1 week.
