- Yield: 4-6 1x
- 1 pie crust
- 1/2 cup apricot jam
- 1/4 cup cream
- Roll out pie dough, using your favorite homemade recipe or a sheet from the store. One large pie crust makes 5-6 hand pies.
- Use a glass to cut 8-12 circles (depending on how many pies you’re making).
- Place circles on a baking sheet lined with parchment paper or silicone baking mat.
- Add a dollop of apricot jam, spreading almost to the edges.
- For the remaining circles, use a paring knife to quickly cut 3 triangles and 1 smile.
- Place the jack-o-lantern circles on top of the jam circles. Fashion a little stem out of a little rolled dough; squish it to the top.
- Crimp the edges of the jack-o-lantern hand pies with a fork.
- Brush with fresh cream.
- Bake at 400 degrees for about 10 minutes.
