Simple Chocolate Rice Pudding (Starting with Leftover Rice)

Use any amount of rice from 1 cup to 3 cups, just adjust the ratio below! And if you end up with more than 3 cups of leftover rice, could be time to rethink how much you’re cooking, right?

Ingredients

  • 2 cups cooked rice (white or brown)
  • 2 1/2 cup whole milk
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup chocolate chips

Instructions

Combine rice, sugar and milk in a saucepan and bring to a boil over medium-high heat. Turn down the heat and simmer for 10 minutes until thick.

In a separate small bowl or glass measuring cup, combine the egg and vanilla and stir.

When the rice mixture has thickened, add chocolate chips and stir until melted. Turn off heat.

Use a large spoon to ladle a big scoop of rice mixture into the cup with the egg (to temper it–so you don’t end up with scrambled eggs). Stir. Pour the egg mixture back into the rice mixture and stir.

The heat of the rice will cook the eggs and the eggs will add a silkiness to the pudding. Serve warm or cold.
