Rice Pudding with Sweetened Condensed Milk

Add an extra teaspoon of vanilla or swap the dairy milk for a cup of coconut milk (including the fat). But don’t leave out the sweetened condensed milk!

Ingredients

2 cups cooked brown rice

14 ounce can of sweetened condensed milk

1 cup of regular whole milk

Instructions

  1. Measure out your rice. (I used 2 cups of cooked brown rice.) Put the rice in a medium size pan.
  2. Add one 14 ounce can of sweetened condensed milk. 
  3. Add one cup of regular whole milk.
  4. Stir and bring to a low boil.
  5. Simmer for about 10 minutes, stirring often (seriously, don’t walk away), until the rice has started absorbing all that gooey milky goodness.
  6. Store any extra 3-ingredient rice pudding in the fridge for up to 1 week (but it’ll never last that long.)
