My kids call this Chocolate Steel Cut Oats recipe “porridge”.
As in, “Can we make the porridge again today?”. Everyday.
My two biggest girls mastered the super simple technique and made their own batch of Chocolate Steel Cut Oats today. Those brilliant ladies even doubled it so they’d have enough to enjoy leftovers for snack. Or as we call it around here, Second Breakfast.
What’s the difference between oatmeal and steel cut oats?
The Kitchn has a nice little article with more details but here’s the main idea behind steel cut oats:
Also referred to as Irish or Scottish oats, this type of oatmeal is processed by chopping the whole oat groat into several pieces, rather than rolled. Steel-cut oats look almost like rice that’s been cut into pieces. This variety takes the longest to cook, and has a toothsome, chewy texture that retains much of its shape even after cooking.
In addition to being used for porridge, steel-cut oats can also be used to make meatloaf and savory congee (a nice alternative to rice), or to add texture to stuffing.”
How to make chocolate steel cut oats
Because steel cut oats are thicker and chewier than regular oatmeal, the cooking time is typically longer and you need more water. Here’s how we gave steel cut oats the foodlets treatment:
- Healthy: We’re cooking the oats in water then adding a dash of whole milk (for protein and calcium) at the end.
- More kid-friendly: We’re also boosting flavor in a major way, with a hit of hot chocolate powder cooked right in. And a sprinkle of chocolate chips on top doesn’t hurt either.
Recipe: Chocolate Steel cut oats

The following ratio serves 2; I usually double it for my kids.
Ingredients
1/2 cup steel cut oats
1 cup water
2 tablespoons hot chocolate mix
dash of salt (optional)
dash of milk (optional)
sprinkle of chocolate chips (optional)
Instructions
In a small saute pan, combine the steel cut oats, water and salt.
Bring to a boil.
Turn down the heat.
Add hot chocolate powder and simmer for about 5 minutes until thick.
Serve with a splash of milk and a few chocolate chips on top.
That’s it! In just a few minutes you’ll have warm bowls of Chocolate Steel Cut Oats to enjoy–and keep kids filled up all morning.
