Coconut cupcakes give these bears on the beach cupcakes their tropical flavor. (If you don’t have the cookbook yet, I love Ina Garten’s Coconut Cupcake recipe!) The addition of a sweet pineapple filling will make you feel like you’ve just hit the beach yourself.
What You Need to Make Bears at the Beach Cupcakes
- Green and blue food coloring
- 4 graham crackers
- Bear-shaped graham crackers, like Teddy Grahams
- Ring-shaped gummy candies, like Gummy Lifesavers
- Paper cocktail umbrellas
- Pineapple ice cream topping, like Smuckers
How to Make Bears at the Beach Cupcakes
Step 1: Make cupcakes and allow to cool.
Step 2: Choose frosting, such as vanilla from Sally’s Baking Addiction.
Step 3: Add the filling. Use a paring knife to cut a cone out of the top of each cupcake. Fill with a tiny scoop of pineapple. Remove the bottom of each cone before adding back on top.
Step 4: Color the frosting. Add 1 drop of green food coloring and 1 drop of blue to the frosting, then mix well to create an ocean blue color.
Step 5: Create the sand. In a food processor, pulse the graham crackers until crushed. Pour the crushed crackers onto a small plate. Set aside.
Step 6: Assemble the beach. Using a knife or offset spatula, frost each cupcake. Carefully dip just half of the frosted top into the crushed graham crackers to for the beach.
Step 7: Finish with a bear. Put each bear-shaped gummy ring (it should look like the bears are wearing a floatie). Arrange one bear with a floatie in the “water” on each cupcake. Top off the cupcake with an umbrella on the beach.
