Balsamic bruschetta is basically the taste of summer in your hands. Which leads to another benefit: no utensils needed! No wonder it’s one of our family’s favorite way to eat fresh tomatoes.
What you need to make balsamic Bruschetta
Making balsamic bruschetta starts with one simple ingredient: tomatoes. I like cherry tomatoes, straight from a garden if you can get them. But really any fresh tomato will work.
Then add:
- olive oil
- balsamic vinegar
- fresh basil
- minced garlic
- salt
- sugar
How to Make Balsamic Bruschetta
The process is super simple.
- Slice
- Stir
- Marinate at least an hour
- Eat

Serve a generous amount of this tomato mixture on top of your favorite bread: whole-wheat or soft French bread, toasted or plain. It’s really delicious on anything.
Ingredients
- 3–4 cups cherry tomatoes
- 3/4 cup extra-virgin olive oil
- 1/2 cup balsamic vinegar
- 1 tablespoon sugar
- 1 tablespoon salt
- 2 cloves minced garlic
- 1/2 cup fresh basil, thinly sliced (or combination of parsley, oregano or other fresh herbs you like)
Instructions
- Slice tomatoes into bite-sized pieces. (I quarter cherry tomatoes.)
- Combine all ingredients in an air-tight container.
- Gently stir.
- Marinate at least an hour, preferably more.
- Dollop generously on bread or mix in with hot pasta.
How to Enjoy Balsamic Bruschetta for Breakfast
Reserve a cup or so of the balsamic tomato mixture for a knock-out breakfast:
- Buzz the balsamic bruschetta mixture in a blender for a few seconds.
2. Pour the mixture into a non-stick saute pan.
3. Crack an egg on top. Add a lid. Cook for about 2 minutes.
4. Serve on toast.
