Better Than Campbell’s Chunky Tomato Soup

We love the soup as it is, but possible toppings might make reluctant eaters more curious to try it. Especially if they can do it themselves:

 

Ingredients

  • 2 onions, chopped
  • 1 stick butter (1/2 cup)
  • 2 26-ounce cans of tomatoes (any kind)

Instructions

  1. In a large sauce pan, melt the butter. Add the onions and saute until soft, about 7-8 minutes.
  2. Add the tomatoes, including sauce.
  3. Bring to a boil, then lower temperature. Simmer for 10 minutes.
  4. Puree with a hand-held blender OR transfer to a blender and pulse until you like the consistency.
