FOR SOMEONE WHO WAS BORN IN ITALY my four-year-old is very anti-spaghetti these days. She suddenly thinks it’s too hard to eat. This didn’t used to bother her, but I guess it does now. Sigh. But before we swear off the stuff, I thought I’d try something…and it worked.
The technique is simple: take last night’s leftover pasta and combine with one beaten egg. I always add a half cup or so of steamed spinach (make it “Florentine, I say!) plus a pinch of grated parmesan cheese. Throw the pasta mixture into buttered muffin pans and bake at 375 for about 15 minutes. At the last minute, add one or two bocconcini, small mozzarella balls, on top and let them just start to melt. Mine went a bit too far but everyone was still very psyched about the “nest”. Ladies and gentlemen, spaghetti is back.
