turkey & cheese roll-ups, an easy lunch or snack idea

PHOEBE IS A MEAT LOVER. I’m not sure why but she even gets excited about saying the word, “meat!” Anyway, I’m using this to my advantage these days–and enjoying easy lunches. This idea is actually a spinoff of an appetizer that I made for my brother’s outdoor wedding last August. We took turkey slices, slathered them with honey-mustard and wrapped each one around a crisp little dill pickle. It’s a delicious snack for adults and a yummy lunch for kids. Serve with whole wheat crackers and fruit.
