It’s actually easy to make pot pies though, whether it’s one biggie or several pies tucked into individual ramekins. Either way, it’s still essentially a one-pot dish complete with veggies, protein and a little flaky crust to boot. My favorite recipe is, naturally, from Ina Garten. Her chicken pot pie recipe, like everything else she makes, is a no-fail option that’s even festive enough for company.
Of course, I make some updates. So here goes…
{FOODLETS RECIPE MAKEOVER}
ORIGINAL RECIPE: Chicken Pot Pie by Ina Garten
- A LITTLE HEALTHIER: Reduce butter by 50%, use whole wheat flour in place of white and add 50% more veggies (carrots, peas, etc.). And for a whole wheat puff pastry recipe, try this one from King Arthur Flour.
- EVEN HEALTHIER: Make the updates above plus, add 2 tablespoons wheat germ to the flour/sauce mixture and throw some spinach in with your veggies. Chopped frozen spinach works perfectly (and easily).
- MORE KID-FRIENDLY: Grate a large onion into the sauce mixture instead of using a bag of whole pearl onions.

I use pastry sheets for pot pies. So much better than pie crust!!

Maybe I’m not navigating through this page properly, but for some reason I’m not able to acquire the recipe for the chicken pot pie as repeatedly pictured in the article. Though I’ve found the recipe for the Ina Garten Chicken Pot Pie (which I was led to believe was the one as pictured with the star pastry tops), the recipe is in fact accompanied by a picture of pies with a completely different (though very conventional) pastry top. I ask you please – Where is the recipe for the Chicken Pot Pie with the star pastry top???

Hello Harry. The pot pie recipe is indeed by Ina Garten. I’ve described the updates I made here on Foodlets. And I used puff pastry from the store for the top; just use a cookie cutter to make a star (or any other shapes you like). Thanks!
