egg salad sandwiches kids love, foodletsI NEVER LIKED EGG SALAD GROWING UP. But our kids totally love it, especially this way.

Inexpensive, simple and even considered “brain food“, I’m happy to whip up a batch of egg salad once every couple of weeks. Our favorite ways to serve these sandwiches are simply on whole wheat bread, cut into quarters or in between doughy mini whole wheat bagels. Throw in a few slices of cucumber and the perfect lunch is served.

Here’s the formula:

for each full size sandwich you want to make, combine:

  • 1 hard boiled egg, chopped
  • 1 teaspoon real mayonnaise
  • 1/2 teaspoon mustard
  • 1/2 mini dill pickle, diced
  • dash of salt and pepper

Our kids eat half a sandwich each and I typically make a 4-egg bowl of egg salad, leaving enough for myself and maybe more for the next day. It’s so good, any leftovers won’t last.
