Some muffins are really just cupcakes pretending to be good for you. These are not those muffins.
As a mom of four small kids, healthy muffins are my secret weapon for packing as many nutritious ingredients into my rascals as possible. All those fruits and veggies? That’s the magic.
How to make magical double chocolate muffins
This recipe uses the same technique to get 5 kinds of fruit & vegetable puree as our non-chocolate version: Magical Muffins.
- Just put a combination of apples, bananas, zucchini, spinach, carrots or sweet potatoes into a pan (or the microwave) with a little water.
- Heat until softened.
- Buzz with a food processor.
- Use what you need now and save the rest for another batch another time.
That’s the trickiest part and it takes about 10 minutes. Then it’s mixing in a bowl and baking in the oven.
PrintMagical Double Chocolate Muffins (With Hidden Vegetables & Fruit Inside)
Use ANY combination of these ingredients to make a puree: Sweet potato, baby spinach, zucchini, banana, apples. Put fruit & vegetables in a pan or microwave safe bowl and add enough water to cover. Cook until soft (4-5 minutes). Puree, along with the cooking water. Use 1 cup for these muffins and freeze the rest for another batch OR make smoothies in the morning–just add another banana plus some coconut water and a handful of frozen fruit. Yum!

Hello! I love your blog! What kind of vegetable oil did you use? Thanks!
charityc says
Hi Christine! Great to hear from you. I typically use canola but you could use any kind. Probably even coconut oil. Let us know what you decide and how it goes!
Holly says
Can you substitute whole wheat flour for some or all of the all-purpose flour?
Thanks!
charityc says
I’d substitute half the regular flour for whole-wheat! More than that and the flavor/texture will be pretty different. Let us know if you try it and how it goes!
Jen says
Can I use already puréed veggies and mix for this recipe? Like baby food?
charityc says
Yes! But just watch the cooking time. Depending on whether the consistency is thinner (I’m guessing it might be), you may need a few more minutes of cooking time. Good luck!
Kaybee says
I’m literally making this right now and now I’m confused! You wrote baking powder in the ingredients and soda in the instructions. Which one?! Ah now I have to turn the oven off until I get a reply
Kaybee says
Also, is it ok to use broccoli?
charityc says
Broccoli has such a strong flavor that it might not work very well here. However, I have 2 places where broccoli is a huge winner: Super Simple Broccoli & Cheese Soup and Broccoli & Cheese Patties.
Anne-Marie says
I have used broccoli, spinach, carrots, pumpkin, sweet potatoes, bananbas and apples and you could not even tell that any of these were in the recipe
charityc says
Sorry, Kaybee! It’s baking powder. 🙁
Hope you had a chance to make them anyway, or again!
Tiffany Johnson says
These are FANTASTIC! My 5 yo is ridiculously picky and he lives these! Thank you a million times!!
charityc says
Yay! I’m so happy to hear that. Enjoy!
Samia says
Could u give an exact recipe for the vegetable puree pls
Megan says
Is the batter supposed to be super thick? It’s like a really sticky dough. My instinct is to thin it out with some water until it’s the right consistency, but I’m not sure.

I’d keep looking for a healthy recipe. These looked and smelled amazing but tasted horrible!! I literally spat it out, and annoyed of all the time and ingredients wasted. I followed this recipe to a T, used 1/2 a cup of mashed sweet potatoes and 1/2 cup of banana puree as my ingredients.
