How do you feed a whole family with one pound of ground beef? Try our Easy Salisbury Steak Meatballs!
This simplified recipe is already a favorite with my kids. We serve our Easy Salisbury Steak Meatballs over brown rice but you could certainly use egg noodles or any kind of pasta.
What Makes these Salisbury Steak Meatballs Easy?
The Foodlets promise is a combination of easier, healthier or more kid-friendly. Here are my updates for Salisbury Steak Meatballs the Foodlets way:
- No need to separate the eggs, where some recipes ask for egg yolks. #hardpass
- Use any kind of breadcrumbs you have, even oatmeal.
- Bake in the oven! Instead of frying in hot grease that’s flying all over your kitchen, these meatballs bake politely in the oven without ever needing to be turned.
- Instead of the sliced onions traditionally used in the sauce, chop those onions finely so no rascals need be alarmed.
How to make Easy Salisbury Steak Meatballs
- Combine ground beef, eggs, ingredients using your hands but try not to over-mix.
- Turn on the oven to 400 degrees F.
- Use a spoon or a cookie scoop to measure balls, then roll with your palms on a parchment lined baking sheet.
- Bake for 15 minutes. That’s it! While these beauties cook in the oven, you make the sauce on the stove.

for meatballs:
- 1 pound ground beef
- 1/2 cup Italian style bread crumbs (or panko or oatmeal)
- 2 tablespoons ketchup
- 2 tablespoons mustard
- 1 tablespoon Worcestershire sauce
- 2 eggs
for sauce:
- 3 tablespoons butter
- one medium onion (or 1/2 large onion), diced
- 2 tablespoons flour
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- fresh parsley leaves to sprinkle on top
Instructions
- Preheat oven to 400 degrees F.
- In a medium bowl, combine ground beef, bread crumbs, ketchup, mustard, Worcestershire sauce and eggs. Use your hands to gently mix.
- With a spoon or cookie scoop, scoop out about 2 inch balls and place on a parchment lined baking sheet (easy cleanup!) Roll each ball in your palms to make rounder.
- Bake for 15 minutes.
- Meanwhile, make the sauce. In a saucepan over low heat, cook butter and diced onions together for about 7-8 minutes. Once onions are soft, sprinkle flour into the pan and stir. Cook for about 30 seconds. Slowly add stock, while stirring. Add ketchup and Worcestershire sauce and stir.
- Put meatballs in the skillet with the sauce.
- Pour over rice or noodles and sprinkle with salt, pepper and parsley.
Tools to Make Easy Salisbury Steak Meatballs
Large skillet. I like using my cast iron but any nice big sauté pan would be great.
Cookie Scoop. It makes the perfect sized meatballs, all the same, every time.
Baking sheet. I’ve had a set of these for 15 years and they’re still working hard.
Parchment paper. Change your cleanup scene with one move. Plus, they’re compostable!
These Easy Salisbury Steak Meatballs come together quickly and easily but I’m sorry to say there are a few pans involved. You can’t win ’em all but trust me, this dish is a big winner for our crew and I hope it is for yours too!

This was an easy and tasty recipe. I was pleased how the sauce came together while the meatballs were cooking in the oven.
