But what makes these strawberry chia seed hand pies good for breakfast?
The whole combination is surprisingly nutritious. With three simple ingredients, you get a make-ahead breakfast full of protein, fiber and antioxidants.

What you need to make strawberry chia seed hand pies
- Pie crust (One crust makes 4 hand pies. Use your favorite recipe or start with store-bought.)
- Strawberry fruit spread*
- Chia seeds*
- Small heart shaped cookie cutter

How to Make strawberry chia seed hand pies
- Combine 3 tablespoons of strawberry fruit spread with 1 tablespoon of chia seeds and set aside.
- Slice a pie crust into four pieces.
- Use your heart-shaped cutter on one side of each piece.
- Put a tablespoon of strawberry-chia seed mixture on the opposite side of each piece.
- Fold the heart-shaped side over the top of the strawberry mixture.
- Slightly moisten the loose heart with a little water and attach to the top of the folded pie crusts.
- Use a fork to crimp the edges.
- Bake on a parchment or silicone-lined baking sheet at 425 degrees F for 15 minutes.
2 options for making ahead of time
- Prepare the pies and place on a parchment lined baking sheet. Cover and refrigerate until you’re ready to bake.
- Prepare and bake the pies ahead of time. Store in a covered container at room temperature overnight.

I made these on Valentines Day and they were a HIT, so I made them again today. They were gone in .025 seconds. On days I work, I leave very early so it’s easy to throw these in the oven while I’m getting ready and the kids can wake up to a hot-out-of-the- oven breakfast. My kids ate two each, so I need to make a bigger batch next time!

I’ve been making these for Valentines Day each year and now I say, “PPIIIIEEEEEE for breakfast” in my best ‘Here’s Johnny’ voice. I mean, really, pie for breakfast!!! Ah, the eye rolls and heads shaking. But they do love them. I use trader joe’s pie crust. Simple and delicious.
