This chunky tomato soup comes together in 15 minutes–and it’s better than anything you’d find in a can. Easy, bursting with flavor and a favorite for kids. Can’t get better than that!
What you need to make chunky tomato soup
- 2 onions
- 1/2 cup butter (one stick)
- 2 26-ounce cans of tomatoes (any kind)
- Salt & pepper
That’s it!
You could add:
- basil
- cheddar cheese
- milk
- pureed sweet potatoes (like we do for our Magical Mac & Cheese)
- pureed white beans (like we do for our High-Protein Tomato Soup)
But you can serve it as-is, like we did. The flavor is bright and the chunky texture is so satisfying! I broiled a loaf of bread we had hiding out in the freezer and added cheddar cheese. Perfect for dipping.

We love the soup as it is, but possible toppings might make reluctant eaters more curious to try it. Especially if they can do it themselves:
- shredded cheddar cheese
- a drizzle of cream or milk
- croutons
- a pinch of fresh or dried basil
- Cook Time: 15 minutes
- Total Time: 15 minutes
- Yield: 8 small servings 1x
Ingredients
- 2 onions, chopped
- 1 stick butter (1/2 cup)
- 2 26-ounce cans of tomatoes (any kind)
Instructions
- In a large sauce pan, melt the butter. Add the onions and saute until soft, about 7-8 minutes.
- Add the tomatoes, including sauce.
- Bring to a boil, then lower temperature. Simmer for 10 minutes.
- Puree with a hand-held blender OR transfer to a blender and pulse until you like the consistency.
Will my picky eater actually try it?
Maybe! Here are a couple of strategies that work well with my four kids:
- Don’t underestimate soup as a dip. For some kids, the only soup they’ll end up eating is the soup that was dunked with the bread. Fine! It’s still a great way to introduce a new, or previously refused, food.
- Serve super small portions. I have tiny espresso mugs and egg cups that work perfectly for the tiniest servings. Kids can try something like soup without the pressure of a huge mug in front of them. Best of all, they can get more if they like it.
