THIS IS IT. If you have picky eaters or just want a few new ideas for your brood, these are the recipes that my kids eat every time. At least right now. (And this is subject to change, like the wind.) All of them are packed with the good stuff: fresh fruit, veggies, wheat germ in place of white flower, honey in place of sugar and even some chia seeds thrown in for good measure. There’s an emphasis on organic stuff and I always try to cook from scratch but with little shortcuts to make life easier for you, because that’s half the battle. These recipes are worth trying for sure but there’s also something important I want to say here.
If you’re struggling in the kitchen–and more importantly with your kids at the table–take heart. These are our hits but I’ve had just as many misses, maybe more. I write about them sometimes but now that I have three rascals running around (and throwing food all over the floor) I have less time to focus on the biggest losers. But trust me, I’ve got my share.
So to my fellow harried moms of the world, hang in there, keep cooking and by all means, try these:
- pumpkin spice mini muffins
- slow cooker pulled pork
- baked zucchini, rice and tomato (“Italian Summer Casserole”)
- strawberry banana frozen yogurt pops
- quesadillas (secretly stuffed with shredded carrots)
- coconut milk and chia seed “pudding”
- healthy apple spice quick bread
- green eggs & ham
- honey whole wheat cornbread
- homemade chicken nuggets
And muffins. Any muffins. That’s why I make so many muffins. 😉
